When traveling to Asheville, expect to taste the seasons in the food. At Pinecrest Bed & Breakfast, we shop for local produce at farmer’s markets. One of our favorite farms is Creasman Farms, purveyors of summer peaches and fall apples. Find them on Wednesday afternoons at River Arts District Market. Alternatively at North Asheville Tailgate Market on Saturday mornings.
Peaches!

Fresh peaches from Creasman Farms!
As soon as summer arrives, peaches make their appearance at breakfast. Often as fresh peach syrup on waffles or chopped with strawberries and blueberries as a side dish. Particularly we love to serve peach turnovers beside our savory egg dishes. Prep these pastries the night before baking to save time in the morning.
Ingredients
2 cups diced peaches
1 T brown sugar
1/2 T cinnamon
1 T lemon juice
1 (17.3 oz) package frozen puff pastry, thawed
1 egg
Glaze:
1 cup powdered sugar
1 T milk
1 t vanilla
Directions
Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper.
In a medium bowl, combine peaches, brown sugar, cinnamon, and lemon juice; set aside.
Unfold two puff pastry sheets onto a lightly floured surface. Cut each sheet into 4 equal squares.
Using a slotted spoon, portion the peaches evenly in the center of each puff pastry square. Fold the pastry diagonally to form triangles and place them on baking sheets, spacing them 2″ apart. Using a fork, crimp the edges to seal.
Cut 3 small slits in the tops of each turnover. Combine egg with 1 T water for egg wash. Brush egg-wash on each turnover. (Can be prepped and stored in the refrigerator overnight.)
Bake at 400 degrees for 17 to 20 minutes, or until golden brown and puffed. Let turnovers cool while you prepare the glaze.
Combine powdered sugar, milk, and vanilla and stir until creamy. Thin will additional milk if necessary. Use a pastry bag with a small hole or fork to drizzle glaze over cooled turnovers.
Makes 8 servings.
