One of the most requested recipes we serve at Pinecrest Bed & Breakfast is Griddled Steel Cut Oats and it’s the perfect recipe for a healthy start to the new year! It is adaptable to preparing in the evening then serving over multiple mornings. Those with an intolerance to dairy can substitute their favorite milk substitute though we are partial to oat milk. Certified gluten-free steel-cut oats are readily available at the supermarket as well.
We found the original recipe at NYTimes.com. It includes a reduced apple cider syrup that we find unnecessary and warm fruit compote though you can serve with the toppings of your choice.
Ingredients
1 cup milk
3 cups water
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 c steel cut oats
2 Tablespoons butter
Combine milk, water, brown sugar, cinnamon and salt in a large saucepan. Bring to a boil, add steel-cut oats, stir to combine. Reduce heat to simmer for 20-25 minutes, stirring occasionally until thick. Spray an 8×8 glass baking dish with cooking spray. Pour cooked oats into the dish and spread evenly. Lay plastic wrap right on top of oats to cover completely then refrigerate overnight.
In the morning, the oats will be set. Cut into 9 squares then 18 triangles (or the size of your choice.) Heat 2 tablespoons of butter on griddle or skillet until foaming subsides. Add steel-cut oats and sear for 3-4 minutes/side until golden brown and heated through. Serve plain or with fruit toppings of your choice.
